For the ferment

  • 300 g flour (1/2 cup)
  • 20 g of yeast (1 sachet)
  • 300 ml of water (1/2 cup)

For the dough 

  • 20 g of salt (2 tablespoons)
  • 700 g flour (1 + 1/2 cups)
  • 20 g sugar (2 flat spoons)
  • 350 ml of water (1/2 cup)
  • 60 ml olive oil (4 tablespoons)

For garnish

  • Tomato sauce
  • Mozzarella
  • Oregano

The preparation

The ferment

  1. Dissolve the yeast in the water.
  2. In a bowl, mix the flour with the baking powder and water.
  3. You will get a wet paste. Cover the bowl with plastic wrap and let stand for two hours.

Dough

  1. In a blender, put all the ingredients together, including the ferment, and blend for about seven minutes.
  2. Cover the preparation with plastic wrap, and put it in the refrigerator for 36 hours.
  3. Once the specified time has elapsed, finish preparing the pizza as usual.

4. Chicago pizza

The dough of this pizza from the city of the same name in the United States contains corn flour, which is why it is thicker and more filling than traditional dough.

Ingredients for the dough

  • 1 tablespoon of salt (5 g)
  • 130 ml of water (1/2 cup)
  • 1 tablespoon of sugar (5 g)
  • 1 tablespoon of yeast (5 g)
  • 200 g wheat flour (1 cup)
  • 1 tablespoon of melted butter
  • 30 g of corn flour (3 tablespoons)

The ingredients for the garnish 

  • Cheese mix:  Mozzarella  and parmesan
  • Tomato sauce
  • Oregano
  • Salami

The preparation

  1. Mix all the ingredients for the dough together.
  2. Oil the dough, then keep it in a bowl covered with plastic wrap, so that it doubles in volume.  
  3. Roll out and flatten the dough using a rolling pin until it is roughly one centimeter thick.
  4. Butter the dough on top, then roll it up. Flatten it again using the roller. Do this several times (roll up and flatten).
  5. Form a ball, then let the dough rest in a plastic-covered bowl for half an hour.
  6. Create the shape and size you want.
  7. Fry the dough, so that the base is lightly toasted.
  8. Preheat it for five minutes.
  9. Then add the filling in the following order: cheese, tomato sauce, oregano and salami.
  10. Put the dough in the oven for ten minutes.
