3 ways to use mushrooms in your recipes

1. Mushroom and spinach risotto

Risotto is a classic and versatile dish of international cuisine, especially Italian cuisine. To make a delicious risotto, all we need is rice, broth (or wine), and creativity.

The creamy aspect of this dish is not only provided by the mushrooms, but also by the cream and dairy products (cheese and butter, in particular).

Ingredients

  • 1 cup of rice (200 g)
  • 1 small onion (30 g)
  • Salt and pepper (to taste)
  • Dry white wine (according to taste)
  • 2 tablespoons of butter (15 g)
  • 3 tablespoons of olive oil (45 g)
  • 1 packet of spinach leaves (500 g)
  • 1 jar of vegetable broth (200 ml)
  • 10 units of large mushrooms (200 g)

Method of preparation

  • To start, sauté the onion in olive oil until golden brown.
  • Then add the rice while stirring to prevent it from burning.
  • Season with salt and pepper.
  • Little by little, add the wine and let evaporate for 5 minutes.
  • Add the vegetable broth and let the rice cook.
  • In another saucepan, sauté a tablespoon of olive oil over high heat with the mushrooms and chopped spinach.
  • Add the cooked rice and two tablespoons of butter to “rise” the risotto.
  • Finally, serve with Parmesan (or whatever cheese you like) and enjoy.

2. Creamy mushroom soup

This creamy mushroom soup is a convenient and healthy recipe to satisfy your appetite.

Ingredients

  • Salt and pepper (to taste)
  • Dry white wine (according to taste)
  • 1 can of mushrooms (300g)
  • ½ leek, finely chopped (50 g)
  • 1 bottle of vegetable broth (300 ml)
  • 2 tablespoons of olive oil (30 g)
  • 3 tablespoons of light cream cheese (45 g)

Method of preparation

  • Preheat a pan with a little olive oil over low heat.
  • Once hot, brown the leek and mushrooms (whole) in olive oil until cooked through (about 3 minutes).
  • You can add two tablespoons of dry white wine.
  • In a blender or blender, mash the sautéed mushrooms and leeks with the vegetable broth and light cream cheese.
  • Season with salt and pepper to taste.
  • Serve the soup creamy and serve it with whatever you like (eg delicious toast).

3. Complete pasta with mushrooms and cherry tomatoes

Ingredients

  • Grated cheese (to taste)
  • 1 can of mushrooms (200 g)
  • 1 jar of cherry tomatoes (150 g)
  • 4 tablespoons of olive oil (60 g)
  • 1 small onion, finely chopped (30 g)
  • Salt and pepper to flavor (to taste)
  • 1 and a half pkg. Of whole pasta (300 g)
  • Several fresh basil leaves to garnish (to taste)

Method of preparation

  • Bring the water to a boil over moderate heat.
  • When you put the pasta to cook, take a frying pan (or a saucepan) and sauté the onion and mushrooms in it over high heat.
  • After browning the mushrooms and onions, add the cherry tomatoes and turn off the heat.
  • During this time, the whole pasta will be cooked and you can pass it quickly by sautéing cherry tomatoes, onions and mushrooms.
  • Serve with grated cheese (or a vegetable substitute) and enjoy!
